The prestigious two-Michelin-starred Ciel Bleu Restaurant at Hotel Okura Amsterdam presents Ciel Bleu’s Refined Nights, an exclusive series of culinary evenings dedicated to extraordinary ingredients. On select Thursdays, the menu will revolve entirely around one exceptional product: winter truffle, Krug Champagne, caviar, or autumn truffle. Fine dining enthusiasts can look forward to a multi-sensory experience rich in flavour, aroma, and texture. Ciel Bleu’s Refined Nights combine world-class gastronomy with top-tier service.


Each evening is a celebration of luxury, flavour, and craftsmanship. Executive Chef Arjan Speelman speaks passionately about these special nights:

February: Winter Truffle

An exclusive winter truffle experience, where the rich and intense aromas of the esteemed winter truffle take centre stage. Each dish highlights the depth and complexity of this seasonal ingredient. Paired with a selection of exceptional wines from Gaja, it promises to be a memorable evening at Ciel Bleu.

April: The Elegance of Krug

On a Thursday evening in April, haute cuisine meets the refined elegance of Krug Champagne. Guests will enjoy a special menu co-created by the chefs of Ciel Bleu and restaurant De Treeswijkhoeve. Both restaurants are Krug Ambassadors, ensuring a perfect harmony between dishes and the world’s most prestigious champagne. Four Michelin stars, one unforgettable experience. 

June: The Finest Caviar

A warm summer evening filled with indulgence at Ciel Bleu. The evening highlights the finest caviar varieties, elevating this luxurious delicacy to new heights. Each dish is a tribute to the refinement of caviar, perfectly complemented by carefully selected wine pairings.

November: Autumn Truffle

As the grand finale of the Ciel Bleu’s Refined Nights series, Ciel Bleu introduces the refined flavours of the season with an exclusive Autumn Truffle Evening. The earthy elegance of autumn truffles shines in a masterfully crafted menu. Each dish is carefully paired with exceptional wines, enhancing the rich, nuanced flavour of the truffle.
